Avocados are packed with the healthy monounsaturated fat, our favorite brain healthy fat. Cocoa powder makes it deeply chocolatey, but also boosts its brain healthy power with flavanols — potent antioxidants. To achieve just the right balance of sweet and savory, taste as you go.

Chocolate Avocado Pudding
This chocolate pudding is so creamy, satisfying and packed with the healthy monounsaturated fat of avocados. Instructions
Scoop avocado flesh into a blender and scrape in the vanilla bean seeds; reserve the pod for another use.
Add cocoa powder, maple syrup, orange juice and salt.
Blend to a coarse puree. With the machine running, slowly pour in the hot water until smooth and creamy.
Taste; add more orange juice or salt if needed.
Divide pudding among 6 small cups and chill. Just before serving top with optional toppings.
